I just realised curry is horrifically under-represented here.

Having said that, curried noodles instead of rice? Any ideas on whether it'll be nice or try and kill me?

Depends I guess.

Singapore noodles are lovely and they are noodles in a spicy curry dressing.

I had those for the first time a couple weeks ago. They must have been blessed by the FSM, because they were absolutely divine.

Tip for lamb for curry: in my experience, Halaal butchers are the best place to go for lamb for curry. Makes lamb from the supermarket look like mutton by comparison.

Yeah, you can do curried noodles. I've heard of that being a popular dish in Japan.

I think I've almost got this recipe sorted, the only problem is I tend to get impatient rather than waiting for it to get properly dry and so the rice tends to get a bit soggy :bummer:

You could mix some cold water and flour together, then throw that in the curry. It'll help it to thicken quicker.

If you want to cook a seriously good curry, do it in a slow cooker. I put it in before I go to work and it's done when I come home. Cooking it long and slow means the spices mellow and mature.

Cook the meat or onions first or just bodge all the ingredients in together and let them get on with it?

My dad has a slow cooker, I may commandeer it over the summer :bounce:
