I am eating spaghetti right... now... (nom nom nom currently chewing).
My current pasta favorite: I call it General Tso's Noodles (have also done with "angel hair" thin spaghetti, linguini, or shells, but standard spaghetti seems best to me after all).
2 cups (500ml) of stock in a small saucepan: flavored with chicken stock paste, garlic granules, black pepper, paprika, basil, turmeric, ground ancho chili, ground chipotle chili, honey, sugar (because I'm cheap like that -- honey is for meadmaking mostly!), Worchestershire sauce (I like it better than soy), some tobasco product or other, and (very important!) sesame oil. Bring to boil/stir.
(nom nom nom chewing again)
Add 1 cup (250ml) of spaghetti noodles (tricky way to measure noodles, but practice makes perfect, kinda
When the noodles have boiled enough that they won't stick together if left alone, turn down to low heat as if making rice and let the noodles slowly soak up all the stock & flavors, stirring now and then.
When about 1/2 the stock is absorbed, chop up some leftover baked chicken and toss it in there for protein count and texture.
When the stock is all absorbed, the noodles are automatically perfect, the chicken tender, and sweet'n'spicy heaven come! No draining away the flavors, no colander, just tasty flavor all over the place.
(nom nom nom more spaggy goodness)
You can throw in some chopped onion or mushroom or whatever at the beginning if you want more vegginess.
(nom nom n- gorramit! empty bowl again!) And to drink today? Some rich, zippy homemade egg nog with plenty of nutmeg to richen things up and "help one relax a bit." Works for me.
I just stopped eating spaghetti... for now. This is my own recipe/formula, posted because I love you all, and your noodly grace has brought much joy to my week already.
